VANILLA CAKE




 VANILLA CAKE 


4 Eggs
375ml sugar
1/2 tsp salt
2 cups flour (500g)
4 tsp baking powder
125ml oil
375ml boiled water
1tsp Vanilla essence
Method
Beat eggs, sugar & salt well
Add water, oil & vanilla and slowly add flour, mixing well. 
Lastly add baking powder and just mix in, not too much mixing. 
Pour into 2 greased cake pans or one square oven pan.
Bake at 170°C for 25 minutes, or until toothpick or sharp knife comes out clean.
Easy vanilla icing

INGREDIENTS
1/2 cup butter/block margarine, softened
3 cups confectioners' sugar
1 1/2 tablespoon milk
1 1/2 teaspoon vanilla extract
food coloring - if desired
Using a hand mixer on low, blend the butter and icing sugar.  (NOT CASTOR SUGAR) 
Add the vanilla adding milk bit by bit, and continue to blend until smooth. If you prefer a thinner consistency, add more milk.
If you prefer thicker ...add more icing sugar. 
If desired, add food coloring.
